its for a baby shower. I’m tired of cheese and cracker trays, veggy trays and egg/tuna sandwiches. But, I want the foods to look good not just chips and boring stuff. Thanks for any ideas.

My mother in law serves absolutely delicious mini-quiche. They are an easy to prepare as well as easy to grab appetizer. She gets hers at Sam’s Club. Sam’s club also has a ton of neat mini appetizers such as mini crab cakes and such. They are all very good~

Break the stems out of mushrooms, fill with Feta cheese and top with pesto. Place in a shallow pan or cookie pan. Fill bottom of pan with water - just enough to go across the bottom of the pan. Bake in oven at 350 until the mushrooms are cooked. *** NOTE - When cleaning the mushrooms do not wash under running water - they apsorb too much water - wet a paper towel and rub them clean.

Baked Brie in Puff Pastry

This wonderful, light puff pastry is filled with melted Brie cheese. Serve with crackers on the side.\

PREP TIME 5 Min
COOK TIME 20 Min

INGREDIENTS
1/2 (17.5 ounce) package frozen puff pastry, thawed
1 (8 ounce) wheel Brie cheese
1/4 cup sliced almonds

DIRECTIONS
Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9 inch pie pan.
Slice the wheel of Brie in half, horizontally, so that the halves are two, flatter wheels of Brie. Lay the puff pastry in the pie pan. Place half of the Brie (rind-side down) onto the pastry dough. Sprinkle almonds evenly over the top. Place the other half of the Brie (rind-side up) over the almonds. Bundle the pastry dough around the Brie.
Bake for 15 to 20 minutes. Let cool for 5 minutes before serving.

You’ve presented a tall order here. You didn’t mention what you were serving to drink. That in itself would set the mood for what you are serving. For a baby shower, I would suggest some type of sherbet or creamy punch with cookies and little individual cakes. Whether you like the idea or not .. a tray of tea sandwiches made from Pepperidge Farm Sandwich Bread, crusts removed, using simple but tasty fillings and cut into four triangles. Don’t forget pastel pillow party mints.

how about mini-sausage rolls that come frozen. You just place on a cookie sheet and cook for 10 min. or a tray of mini egg rolls or stuffed dumplings.

Do you live near a Trader Joe’s? They have a wonderful Hummus tray in a divided container with 4 different flavors of hummus. Pair that with pita chips or even buy fresh pita or flatbread and cut the bread into wedges. Other items from Trader Joe’s that work well for a crowd: Vegetable pate (with your choice of cracker to dip), Frozen meatballs that you can heat and serve on toothpicks; Meringue cookies. There are lots of baked goods to choose from that come in small portions that you can set out on a tray. Fruit plates always work well. If you want to get a little fancier a chocolate fondue with a variety of items to dip (strawberries, marshmallows, pretzles, etc.) is always a big hit.

take a loaf of french bread, halve it down the middle. top with pesto (homemade or jar), very thin apple slices, and white (romano, parmagiano reggiano, etc) cheese of your choice. stick under the broiler for 5 min or until the cheese is bubbly.

also, for more of a dessert one, easy cheese blintzes–
take white bread, remove crusts, flatten with rolling pin
spread with slightly warmed cream cheese and roll up each slice. dip in melted butter and cinnamon sugar mixture, and bake 350 degrees 10 min…delicious, and actually healthy if you use light cc and fake sugar!

Bruschetta:
Boiled eggs cut in half longs ways. The yolk scooped out and caviar put in the cavity.
If you want sweet stuff then try apples stuffed in puff pastry, baked until the pastry rises and then piping fresh whipped cream mixed with a bit of vanilla sugar. Sprinkle with icing sugar

Mini Quiche– (spinach) (Swiss cheese)

Mini Tacos–

Pumpkin Pie Wontons–

Mini Pigs-in-a-Blanket– Preheat oven according to directions on package of crescent rolls. Unroll crescents while leaving in squares (keep 2 connected) so you have 4 squares pinching seams together. Cut each square into 5 strips and then again going the opposite direction to make 10 pieces. Roll each piece around a Little Smokies sausage and place on a greased baking sheet. Sprinkle each pig with garlic salt and parmesan cheese. Bake according to the directions on the crescent package (baking time may be less than directed because of the smaller pieces so watch closely).

Bake muffins in mini muffin pans– banana, zucchini, pumpkin, blueberry, chocolate chip, or these!

Cheeseburger Mini Muffins
1/2 lb ground beef
1 small onion, finely chopped
2 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup milk
1/2 cup butter or margarine, melted
2 eggs
1 teaspoon prepared mustard
8 ounces shredded cheddar cheese
–Preheat oven to 425 degrees.
In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a mixing bowl, combine flour, sugar, baking powder and salt. In another bowl combine ketchup, milk, butter, eggs and mustard. Stir into the dry ingredients just until moistened. Fold in the beef mixture and shredded cheese. Fill greased miniature muffin cups three-fourths full. Bake for 15-18 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool for 5 minutes before removing from pan to wire rack. Refrigerate leftovers.

Hope these work for you!
Enjoy!
